Tortiglioni beans and champagne

ingredients
400 g of tortiglioni
400 g of fresh fava beans
150 g smoked ham in a single slice 2 leeks
3 tablespoons extra virgin olive oil
1 glass of champagne brut
50 g of grated cheese Salt q.b. Pepe q.b.
preparation:
Remove the green part of leeks, white part cleaned by cutting the ends at the base and raising the first layer of leaves. Slice them thinly and let them dry for 10 minutes with extra virgin olive oil.
Shell the beans boil for five minutes in unsalted water, drain and peel them and add to pan. Cook for 5 minutes, stirring with a wooden spoon, pour the champagne and continue cooking for another ten minutes on high heat.
Cut the ham into cubes, add them to the other ingredients already cooking and cook for another 7-8 minutes, add salt and pepper at the end. Boil the rope moldings, drain underdone and let them cook for a minute in the pan with the sauce, stirring. To finish, turn off the heat and sprinkle with grated pecorino.
